Cabernet Franc is Ontario's superstar red. We love it as it embraces cool climate and its typically Ontario personality — structured, slightly shy, and nuanced in the middle. Often as sidekick to Cabernet Sauvignon in a rich Bordeaux, there's no need for it to take the back seat!
Here are three wildly different Cab Francs that show how delicious and versatile this — one of the oldest grape varieties (and Cab Sauv's parent) can be. From rich and earthy, to herbaceous smokey berries to raspberry and chocolate: enjoy all three!
2016 Foxcroft Cabernet Franc

The deep, dark and earthy one. Fruit was hand harvested at the start of November in 2016. The wine was fermented with natural yeast. Pressed gently after three weeks and put to neutral French oak barrels - chosen to highlight the perfect growing conditions of 2016 and the beautiful fruit.
A dark and earthy Cabernet Franc with notes of black pepper and blackberries on the nose. The palate is generous and rich with a firm tannin structure and medium acidity. A pure expression of the Foxcroft Vineyard.
2016 Wingfield Cabernet Franc
If the other is dark, this one is light on its feet, composed and elegant. Aged in old oak barrels for 17 months. A pure example of the Wingfield Vineyard. Subtle vanilla, pure raspberry and a slight aromatic of beetroot. A smooth tannin structure on a full bodied palate.

Harvested from the Wingfield vineyard in November of 2016. Being a new vineyard this fruit was destemmed and then inoculated with a neutral "Champagne" yeast selected to extract pure fruit. Aged in a combination of Hungarian and French oak for 27 months.
An exceptionally rich wine. Aromatics of rich leather, dark red fruits and cedar followed by a full palate with smooth tannin. Notes of chocolate and raspberry on the finish.

Trail Estate Winery is known for singular focus on site, varietal and winemaking acumen. Our process is ardently low-intervention and minimalist. We want wines to reflect where they come from and the year they are grown. As such, we leave much to Mother Nature, but (frosts and droughts aside) we wouldn't want it any other way.
Our winemaker, Mackenzie Brisbois was named one of the "Top 5 Winemakers to Watch" by Toronto Life for her intuitive, immersive approach to winemaking. A native of Prince Edward County but she is a veteran of multiple harvests in New Zealand, South Africa and British Columbia.
She employs wild-ferments whenever possible for their ability to build palate texture - whether it be a complex, soulful Unfiltered Chardonnay or knife-edge Skin- or Barrel-Fermented Riesling. We like to explore new (or newly rediscovered) paths in wine including skin-fermented whites, orange wine and Pét Nat natural sparkling. We do not filter and leave the wine whole and its most complex. Each wine tells the story of the site and vintage with unabashed honesty.
Since our opening in 2014, we have seen the wine world change for the better: wine lists - and tastes have become more dynamic — driven by conviction and courage. We enjoy our part in that. We invite you to be part of our journey! Cheers!
